Cream butter and sugar. I chose to do all of this by hand. Next year, I'm using the kenwood to get the start done.

Add 1.8 Kilos of dried fruit. I work hard to use as little sultanas, raisins and currants as possible, but this photo only seemed to show them! So...

I mixed it up a bit to show the more colourful stuff I added. There's cherries, ginger, figs, dates, apple, apricots... Random dried fruit from the shop. :-) The figs are a must though.

Puddings and Calico Puddings and Calico

We made two puddings as i am still unsure as to whether my pots are big enough for one big one. They need to sit in the water, not touching the metal. Last year we made three puddings out of this batch, rather than two, however I only had two big pots and one reasonably big pot, so one of them ended up with a burnt bottom apparently. The instructions say to grease and then flour the calico. I don't remember doing that last year, but I have this year.

We used jute twine to tie it together. You dump the pudding mix into the centre of your greased and floured calico, and then twist the top and get someone else to tie the top. Then I just tied the calico ends around the wooden stick.

We'll cook these for about 6 or 7 hours. On the day, we cook them for an hour or two to heat up/finish off.

My recipe has you dampen the cloth and flour... no greasing.

We'll do ours on Saturday I think—and Puggle can help... even if he has a cold:-) I suspect that boiling it for so long will kill _anything_!
