1) Deep frying - Happy, taking this off the new list.
2) Shallow frying - Yep, happy with this one too.
3) Pancakes/crepes etc - yep, happy with my latest forays there too.
4) Flatbreads - No progress here.
5) pastry - Bought the lard, and that's about it for now.
6) Caramel and toffee. Done a couple of times now, feeling a lot more confident.
7) Croquembrouche... nothing yet.
8) Cake decorating - Done. Happy. :-)

2 1/2 cup plain flour
3 tsp baking powder
1 to 2 tsp salt
1/2 cup plus 2 Tbsp butter or margarine or lard or copha or shortening (pretty much, use any fat (not oil) you have. Could use bacon grease or the leftover chicken fat from a roast if you want)
3/4 cup hot water
Mix lour, baking powder and salt. Cut in the fat and mix well until little balls form. Pour in hot water a litlte at a time. Mix dough well. (Dough will not be sticky and will be slightly elastic.) Shape into two-inch balls and press each ball flat with a rolling pin or tortilla press. Cook on a medium-hot grill until small light-brown spots appear. Flip and cook on the other side.
Makes about a dozen tortillas.
