When you have a chance, could you maybe share the lemon pudding recipe with me? I want to give this crazy pudding thing a go, and while I have Cathy's chocolate pudding recipe, it sounds like it would be a bit too much for summer eating for me. No pressure, obviously - if you don't have time, it's no big. Just figured that I'd ask.

Ask and Ye Shall Recieve *grin*

1 cup self-raising flour
3/4 cup caster sugar
1 egg
40g butter, melted
½ cup skim milk
grated rind and juice of 2 lemons
1 tablespoon cornflour
1 tablespoon custard powder
icing sugar, to serve

Preheat oven to 180°C (350°F).

Combine flour and ¼ cup of the caster sugar in a bowl.

Add egg, butter, milk and lemon rind and beat to combine.

Pour into a 6-cup capacity ovenproof dish.

Combine cornflour, custard powder and the remaining ½ cup of caster sugar and sprinkle over top of pudding.

Combine lemon juice with 1½ cups boiling water and pour over pudding.

Bake pudding for 30-40 minutes or until puffed and golden.

Dust with sifted icing sugar and serve with ice-cream or yoghurt, if desired.

TIPS: Serve immediately – if you allow the pudding to stand, the sauce will absorb back into the cake. You can substitute the lemon with orange or lime, or try a combination of all three citrus fruits.
Hee! That was so fast! That looks really good, though. I'm going to have to do it in the very soon future.

At risk of sounding stupid, though, what's caster sugar? Um, just -- I mean, in terms of colour and grain size. I can probably puzzle it out from there.
It's fine sugar.... um... not powdered, between powdered and normal.

Does that help?

I have a tendancy to keep my recipes in NoteTab while I test them and if I like them then I move them around. :-)
I do that, too, with notepad. (Okay, I use RoughDraft, but close enough.)

Between powdered and normal I can do. I'll probably just whir the regular stuff in a blender - sounds like it ought to do the same thing.
Yes, I have read of people doing that. Ir's filed away in my list of "useful things to remember."

We watched some more episodes of Alton last night. He's a hunny
:-)
We're going to start subjecting our friends to him too.
We watched him do baby back ribs and the cake icing one. Yum!
Otherwise known as "superfine" apparently, or caster sugar : finely granulated sugar (not as powdery as confectioner's sugar)

Hee! You're clever. I should've just googled. Sometimes I'm slow.
I'm just bored and reading a baby forum. There's only so many times I can tell my computer how to run it's life...
*grin*
Do you have Yahoo!Messenger, or the AOL one? I'm debating sock patterns, so I'm not terribly interesting, but if you want someone to talk to...

Baby forums are either delightful or amazingly stressful, I've found.
I'm on ICQ and MSN, I could be on yahoo too I guess *looks thoughtful*

I have a yahell login after all *grin*
Hee! I have ICQ...Somewhere... Er. I suspect that it's no longer installed, as I was stalked there for a while.

My yahoo is vegetariansushi, as I am not at all creative. I'm invisible there, but will be online -- oh, hell, who'm I kidding? I'm pretty much always online. I'll be around probably for a few hours right now, anyhow.
Do you have a UIN which I think stands for Universal Identification Number?

Email me if you do, callisto at g mail dot com
I'm working on it - I know that I have an ICQ, but think that I'm too oldschool for a UIN. As soon as I remember my password I'll email you the number.
'Usbandly one says Yahoo is ICQ. I'll check it out and come back to you. BBIAS
