I don't suppose that you want to give me the eggplant szechuan recipe, do you? Please? I'll ask real nice.

I like this one

2 long Chinese eggplants, cubed
1 1/2 tablespoons soy sauce
1 tablespoon red wine vinegar
1 tablespoon white sugar
1 green chile pepper, chopped
1 teaspoon cornstarch
1/2 teaspoon chili oil, or to taste
2 teaspoons salt
2 tablespoons vegetable oil

Procedure

1. Place the eggplant cubes into a large bowl, and sprinkle with salt. Fill with enough water to cover, and let stand for 30 minutes. Rinse well, and drain on paper towels.
2. In a small bowl, stir together the soy sauce, red wine vinegar, sugar, chile pepper, cornstarch and chili oil. Set the sauce aside.
3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Fry the eggplant until it is tender and begins to brown, 5 to 10 minutes. Pour in the sauce, and cook and stir until the sauce is thick and the eggplant is evenly coated. Serve immediately.

I actually have about three, and then just make it up because they all use different techniques. I used to salt the eggplant, but have not done that in years and years now. I also use any sort of eggplant, and just use the whole thing. We're really getting into eggplant around here. :-)

Yay, thank you so much! I love eggplant more than I care to admit, and that sounds fantastic.

Oh, and I don't usually put the chili in (or pepper) because I don't usually have fresh chili lying around and John's chili tolerance is not as high as mine and I forget that sometimes. So it's just easier not to torture john. For now.

03. What was the last desert you ate?

It must have been a bit dry with a sandy texture. Hopefully they gave you dessert afterwards!

I've always wondered what foie gras is...?

Date: 2006-05-09 04:10 am (UTC)From: [identity profile] callistra.livejournal.com
It is the enlarged liver of geese. I don't have a problem with liver, it's the methods used (forcefeeding the geese in inhumane methods) that I object to.

wiki has a good explanation too. I've never eaten it, thought that I might have, having worked in a French restaurant for a bit, but nope. (It probably helped that I was vegetarian at the time:P)
