Ok, so we had mushroom risotto, Beef and Guiness sausages and corn last night, and it was good.

So, tonight we have stroganoff. I'm looking for kick-arse recipes for stroganoff! The Big V and I will make pasta to go with it. I have mushrooms, onions, beef, and greek style yoghurt (I often interchange natural yoghurt and sour cream) and everything else under the sun. Except sundried tomatoes.

But anyway.

Kick-arse recipes please?

Or should that be Kick-ASS Recipes PLZ?

I rather enjoyed the one from Jamie Oliver's latest (I think!) book, it was meant to be venison and wild mushroom, but we did beef and plain mushroom, and it was pretty good. Nothing exotic, ingredients wise:-) (well, aside from the venison:-) )

My recipe is to brown the beef strips and onion in spray oil with a pinch of nutmeg and a teaspoon of paprika. Add enough beef stock to wet the mix without covering it (but that depends on taste) then slowly simmer until beef is tender. At this point I add a teaspoon of mustard (dijon or wholegrain are excellent, and yes, mustard IS a necessity), red capsicum strips and the mushrooms. Add a heaped tablespoon of tomato paste and stir through. Simmer until mushrooms and capsicum are tender. Turn off heat and add yoghurt (my dairy additive of choice in Stroganoff). This prevents clotting. I often make the mix without the yoghurt a day ahead, then reheat and add yoghurt just before serving. Since you're having it tonight, make it this morning then finish it off tonight. This allows the flavours to mature.

You'll note I haven't given many measurements, mainly cos I dont' use them. Go according to your own taste of what works for you.

I have one somewhere involving whiskey and pickles....and loads of paprika. Good paprika seems to be the key.

Olive oil
50g unsalted butter
600g beef fillet in strips, seasoned with salt and pepper
1 small onion, finely diced
1 garlic clove, finely chopped
200g chestnut or chanterelle mushrooms, thickly sliced
1/2 cup whisky
3 gherkins, finely chopped
large pinch smoked paprika
300ml sour cream
steamed white rice
small handful chopped flat leaf parsley

Heat wide heavy frypan over medium high heat, add splash olive oil and half the butter.
Brown beef in batches. Transfer to plate, cover with foil to keep warm.
Melt remaining butter in pan, cook onion and garlic over medium-low heat for 5-7 minutes until soft.
Add mushrooms, cook 1 mintue.
Add whisky plus juices from rested beef. Bring to boil, cook 2-3 minutes.
Add gherkins, paprika, sour cream. Reduce sauce over medium-low for 7 minutes, then add beef and warm for 1 minute.

Season, serve with rice and parsley
