they taste great when made into a mash or (like i do) mixed half/half with potato to create the mash.

Fry them with some garlic then add the normal things you would add to make potato mash (in my case a little butter and a touch of milk and some salt)

I'm putting them in the tomato soup I'm going to make in the next little while:-) (Puggle's asking me _right now_ "when are we going to start making dinner?"

redbraids has a lovely salad-y recipe. Cannellini beans, soaked and cooked. Mix together with 1/2 red onion and a handful of capers, and dressed with oil and vinegar... Yum!

Actually, I have a LOT of tomatoes left over from the month of north african cooking. I could make *fresh* tomato thoup.

Blend the beans until they are like a thick sauce (you may need to add some water to get the right consistency.

Lightly fry chopped onion, garlic and sliced mushrooms in a pan with a dash of olive oil. Add cracked pepper and salt to taste with some fresh basil if you have any.

Right at the end add slices of semi sundried tomatoes and the blended beans. Ensure it is all heated through then pour over pasta of your choice.

I love cannelini beans. This is a favorite recipe (http://orangette.blogspot.com/2005/12/art-of-so-called-side-dishes.html) as is simmering the beans with chicken stock, adding chopped escarole when nearly done, and serving with a dash of olive oil and lemon juice. I also love the beans in salad with roasted red peppers, onion, and balsamic vinegar.

We like them in Space Odyssey Soup. Chicken stock (or bacon/bacon bones or vegie stock), teeny pasta stars (stelline?), tomatoes, fried onions, whatever other vegies you like, green beans (added near the end). Serve with (real, obviously) parmesan cheese sprinkles, cracked pepper, heavy/crusty Italian bread.
