Am I missing something? Why is every one talking about having lamb on Australia day like it means something? Why am I being advertised at, that I have to have lamb on Australia day? I don't think I have heard of this one before! 

My plan was something with "ese," or "ish" on the end - Chinese, Japanese, Turkish, Lebanese... I hadn't decided yet

Don't they? I thought the Turkish/Lebanese/Morrocoan dishes were mostly lamb based, India was preferred lamb, since they hold cows sacred, and most countries eat mutton rather than lamb.
Since we don't hold any animals sacred, we eat all of every one else's sacred animals.

I'm just going on personal experience that it's hard to get lamb in restaurants in the various countries I've visited (none of which are ones you listed :P)

America/asian countries and most of western Europe think "ew yuck how could you eat that" from what I've experienced, might not be true other than that though!
