Ah well. Next time perhaps. I don't know if I want to try this again, I'm quite happy with my steaks with ab it of seasoning and then medium. Mind you, I don't know what it was with the steaks but they were shocking! The fat in them was so huge I cut it out, and I almost *never* cut it out. And the meat itself was fatty too. Yuck. Ah well.
